Ingredients (Serves 4)
- 2 large sweet potatoes, peeled and diced into 1-inch cubes (about 2 lbs)
- 1/2 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1/4 teaspoon ground cumin
- Salt and black pepper to taste
- 1 tablespoon olive oil
- Olive oil spray, for roasting sweet potatoes
- Optional: 2 tablespoons fresh parsley, chopped, for garnish
Method
1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper and lightly spray with olive oil spray.
2. Place the sweet potatoes on the prepared baking sheet and lightly spray them with olive oil spray. Roast in the preheated oven for 25-30 minutes or until fork tender.
3. Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for about 5 minutes or until onion is softened.
4. Add the roasted sweet potatoes, vegetable broth, thyme, smoked paprika, cumin, salt and pepper. Stir to combine.
5. Bring to a boil then reduce heat to low and simmer for 15-20 minutes or until sweet potatoes are very tender.
6. Blend the soup with an immersion blender or transfer it to a blender and blend until smooth. Taste and adjust seasonings as desired.
7. Serve warm with optional chopped parsley as garnish.
