  • 8 large eggs
  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 1/4 cup diced red bell pepper
  • 1/2 cup diced mushrooms
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup shredded cheese of your choice

Method
