- 8 large eggs
- 2 tablespoons olive oil
- 1/4 cup chopped onion
- 1/4 cup diced red bell pepper
- 1/2 cup diced mushrooms
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup shredded cheese of your choice
