Delicious miso recipes

1. Miso-Glazed Asparagus:

Slice a bunch of asparagus and sauté in sesame oil. In a small bowl, mix together 1/4 cup miso, 2 tablespoons mirin, 1 tablespoon sugar and 1 tablespoon of sesame seeds.

Pour over the asparagus and cook until it’s tender, about 5 minutes. Serve with a sprinkle of chopped chives or scallions.

2. Miso-Mango Salad:

Start by whisking together 1/4 cup white miso, 2 tablespoons rice vinegar, 2 tablespoons honey and 2 tablespoons of canola oil in a large bowl.

Add in 4 cups of cubed mango and toss to combine. To finish off the salad, top it with some toasted sesame seeds or chopped nuts for added crunch.

3. Grilled Eggplant with Miso-Soy Glaze:

Slice an eggplant into 1/2-inch thick slices and brush each side with a mixture of 1/4 cup miso, 1/4 cup soy sauce, 1 tablespoon honey and 2 teaspoons of sesame oil.

Grill the eggplant slices until they’re tender, flipping once halfway through cooking time.

4. Miso Carrot Soup:

Start by sautéing 2 cloves of garlic in some olive oil until fragrant. Then add in 3 cups of diced carrots and cook for 5 minutes until they start to soften.

Add 4 cups of vegetable broth to the pot along with 1/4 cup miso paste and bring the soup to a boil before reducing heat to low and simmering for 15 minutes until carrots are tender.

Finish off the soup by blending until smooth before serving with a sprinkle of freshly chopped parsley or cilantro on top.

5. Miso-Glazed Salmon:

Start by whisking together 2 tablespoons miso paste with 1 tablespoon mirin, 2 teaspoons soy sauce, 1 teaspoon honey and some freshly grated ginger in a small bowl until smooth.

Place four salmon fillets into a greased baking dish and spoon over the miso glaze before baking in the oven at 375°F for 20 minutes or until cooked through.

Serve this delicious salmon over some steamed rice or noodles for an easy dinner dish!
