Ingredients (Serves 4)

  • 4 large eggs
  • 2 avocados (14 ounces each)
  • 4 slices of whole-wheat bread (4 ounces each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Water (enough to fill a medium pot 2-3 inches deep)
  • 1 tablespoon white vinegar
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder

1. Fill a medium-sized pot with 2-3 inches of water and add 1 tablespoon of white vinegar.

2. Place the pot on the stove over medium-high heat and bring the water to a low boil.

3. Crack each egg into a separate ramekin or bowl, making sure to not break the yolk.

4. Once the water is at a low boil, reduce heat to low and slowly add each egg one at a time into the water.

5. Let eggs simmer in the water for 4-5 minutes, or until they are cooked to your desired doneness.

6. As the eggs are poaching, remove the avocados from their skins and mash them up in a bowl using a fork.

7. Add salt, pepper, garlic powder, and olive oil to the mashed avocado and stir until everything is fully combined.

8. Toast each slice of bread in a toaster or under a broiler until golden brown.

9. Spread each slice of toast with the mashed avocado mixture and top with one poached egg per slice.

10. Sprinkle with a bit more salt and pepper if desired, then serve immediately and enjoy!
